Jo Marsh loves to do things her own way. When opening her new cellar door, Jo thought she might want something fizzy for those coming to taste. She was in charge of making Sparkling during her days at Seppelts, so she's no stranger to the style, but a traditional bubbly wouldn't fit with the Billy Button vibe. Prosecco, with its Italian origins, would be the perfect fit. However, instead of the cheap and simple Charmat method that almost all Prosecco producers use, Jo made the unconventional move to make hers using traditional 'Champenoise' method made famous in Champagne. The result is a drier and more complex style of Prosecco, but one that is deliciously easy to drink.
