In a move away from his main exploits under the Tomfoolery label, here winemaker Ben Chipman and wife Sarah tackle Adelaide Hills Chardonnay with a minimalistic attitude.
This is a tightly wound package, imbued with subtle funk and pristine acid.
It’s a cracking Chardonnay. Full malo providing thirst-inducing texture, the balance of oak judged perfectly.
Ben and Sarah made only 60 dozen, a small batch, passion project worth checking out, for sure.
What It Tastes Like
Nuts and nougat, woodspice, lemon sherbet, natural salty, savoury feel. There’s a cool, unforced feel to the wine, has a sort of easy power and charisma. Tension and energy shines from the fruit. Lemon meringue pie, short crust. Pretty tight but with a soul of funk.
Sourced from the Shoenthal Block in XXX, Adelaide Hills. 100% hand harvested Batard clone, the grapes were whole bunch pressed before being run to old French barrels. 100% malolactic fermentation and ageing on gross lees in barrel for 6 months with natural cold stabilization before bottling unfined and unfiltered. 12% alcohol. 600 litres produced. Textured but super tight as well. Requires room temperature, big glasses and a little patience. Be careful not to drink it all before it opens up!
