This is a special Pinot Noir from a special part of Tasmania. The Sinapius vineyard was purchased by Vaughn and Linda in 2005 when they were just 24-years-old. This close planted 3ha vineyard in Pipers River produces tiny amounts of exceptionally intense fruit.
The Enclave is hand-picked from one small part of the vineyard. It takes two vines to produce a single bottle of wine - painfully low yields producing exquisite fruit.
This is the first release of this wine. It’s fermented as 100% whole bunches, matured in fine French hogsheads and barriques and sent to the bottle without filtration or fining.
This is a stunning example of the quality of Pinot Noir that can be produced in this part of the world. A top vintage resulting in a wine that is refined and beautifully poised.
What It Tastes Like
Heady aromas of Asian spices, slight smoke and game intertwined with lush red fruits and some herbs. It smells sensational. The palate is a tightly wound package, taught, athletic yet generous with flavour. The tannins come in fine sheets and are supple. The overall feel is a dynamic one. A wine that sucks you in and seduces. It’s very, very good.
97 points “Planted to tightly spaced vines evocative of Burgundy at 10 250 vines per ha, the idea is to draw upon the competitive nature of the vines’ root systems, resulting in greater concentration and purity of fruit. Indeed, this a more compact, tightly wound wine than the Home Vineyard, drawing upon a core of damson plum, sour cherry, bonbon and forest floor notes. The plume of flavour is given crunchy energy by sinuous tannins, livewire acidity and a mineral tang. Well handled oak and some whole cluster briar round out the package.”

This particular vineyard block is positioned in the prized North-East facing mid-slope of our property, at a high-density of 7700-10250 vines, with 12 different clones of Pinot Noir. This is a much higher density and clonal mix than any other vineyard in the Pipers River region, and possibly Tasmania. The close spacing results in smaller bunches and berries, with a greater concentration of flavour, structure and minerality. It takes two vines to create just one 750ml bottle of wine! Low yields (<0.5kg per vine – 30hl/ha) Handpicked at 12.4 Baumè, sorted in the vineyard and again in the winery.

Sinapius is a premium boutique Tasmanian winery started by two young, passionate winemakers. The couple, Vaughn Dell & Linda Morice, purchased the site when they were only 24-years-old and chose to plant their vines in the Burgundian fashion opting for high-density planting and low yeilding crops.
Their wines are of extremely high quality, made in small amounts and are highly sort after by collectors.

Notoriously fickle to grow, this delicate red variety can deliver a kaleidoscope of flavours and aromas, from the bright and floral to the moody and mysterious and everything in between. The cooler regions of Australia are where Pinot Noir is most at home. Look to Tasmania and Victoria for the best examples, with some quality wines beginning to show from the Great Southern and from the cooler parts of NSW.
