Salo is the project of two of the Yarra Valley's most loved winemakers - Steve Flamsteed (of Giant Steps fame) and Dave Mackintosh (Arfion main man). They describe the aim of this side label best: "We want to use intuitive winemaking on premium parcels of fruit to make gritty, textured, natural wines. University taught us how to overcomplicate things; to add yeast, add malo bugs and add complexity by working wines. It’s taken many years to knock these thoughts out of our heads, and we’ve found that if you have great fruit, the best wine is made by doing bugger all." This 2015 Chardonnay is the perfect, high-quality example of what these two brilliant winemakers are trying to achieve. The fruit comes from the cooler Gladysdale subregion of the Upper Yarra Valley, with all the hard work being put in in the vineyard rather than the winery. It's very simply whole bunch pressed into old, large format oak, with wild yeasts no additions. It's a natural, energetic, highly characterful Chardonnay, expressing the slightly wild side if these two wonderful winemakers. Top release of this delicious wine.
What it Tastes Like
Brilliant bouquet full of ripe peaches and grapefruit, with real smokey, spicy, flinty undertones. The palate pulsates along with a backbone or steely, citrusy acidity and layers of stone fruits, minerals and toasty oak flowing around it. As complex as it is delicious.

The fruit comes from the Gladysdale Vineyard in the Gladysdale subregion of the Upper Yarra Valley. It's a cold site, picking an average of 3 weeks later than the Valley Floor. It's the I10V1 clone planted in the region 25 years ago. Soils are red and grey volcanic over basalt base rock. A vibrant, rich and fertile part of the valley. Whole bunch pressed to 500 L Puncheons and our 700 L Foudre. No additions, wild yeast. No Malo.

Salo is a collaboration between two of the Yarra Valley’s finest winemakers: 2016 Gourmet Traveller Winemaker of the Year Steve Flamsteed and front man of cult-favourite Arfion, Dave Macintosh.
For talent and experience in this region, there aren’t many who come close to this formidable duo. Their wines are only ever made in small batches, usually 200-250 dozen at a time, and represent a meeting of the minds of these two winemaking superstars.
The Yarra Valley stands tall as one of the country’s finest cool-climate wine regions.
