There is a holistic approach taken by Mike Boudry and Greta Moon for their label Moon. They farm their Nagambie Lakes vineyard with adherence to biodynamic principals, the wines are made as naturally as possible. They are searching for the purest voice of the vineyard to shine through in each wine and the results are stunning. This Chardonnay is unadorned with winemaking tricks. It relies on the perfect balance of the fruit for complexity, looking for acid, tannin, flavour and sugar to all play their part. This was gently pressed by hand, clarified naturally and bottled by gravity. This glorious Chardonnay is the result of minimalist winemaking at its best.
What it Tastes Like
Peaches, riverstones, mineral driven. It's also mealy, savoury and herbal. Pretty complex in style. Lot to ponder. The tiniest bit of grip, but cuts it tracks through the mouth. Twist of honey, grapefruit and lemon. Cleansing and vital, feels unadorned and really unique.
2015 MOON Chardonnay This Biodynamic wine is made from fruit grown in our Goulburn Terrace vineyard, on the banks of the Goulburn river at Nagambie, in Central Victoria. The Chardonnay vines are mostly on an east facing terrace slope closest to the river, with some on a level area above the slope. The soil is quite sandy near the surface, becoming progressively more clay dominated at depth. The 2015 growing season was a few degrees warmer than average throughout the spring, returning to normal conditions from January onwards. Rainfall was around half the average overall, but reasonable rain in every second month avoided any water stress on the vines. The fruit was harvested by hand over several days in the third week of February, yielding around 1.5 tonnes/acre. Grapes were crushed directly into the press basket, with the stems separated and added back to the basket in layers to help juice drainage. A light pressing produced 520 litres/tonne of juice, and the hour or so in the press provided the only skin contact. Juice was cold settled in two batches, with the first grapes to be picked hving a lower sugar content than the last. Settled juice from the lower Baumé batch was run into old French oak barrels (the youngest was 7 years old) and the later pick was fermented in a stainless steel tank. After spontaneous alcoholic and malo-lactic fermentations, the wines were kept on lees (the barrels stirred, the tank not) for a further 11 months, before racking and assemblage. The finished wine was allowed to settle and clarify naturally before being gravity bottled without fining or filtration. The wine has a crisp citrus note followed by a complex series of textures and flavours that are mouth-filling but not at all heavy. The old oak has contributed subtly to the flavours without making the wine overtly oaky. Tannins from the limited skin contact are gentle, and the wine has great length. Alcoholic content is 13%. This wine is certified Bioodynamic by NASAA.

Their wine styles are very traditional, perhaps a bit old world. The emphasis is on building structure and complexity, and the wines tend to be savoury, with fruit characters contributing to the deliciousness of the wine without dominating the palate. Where wines are fermented or matured in barrels, we use mostly old French wood, so that any oak flavour is subtle.
