The metamorphosis of Margaret River Chardonnay has been well documented over the last few years, with a new generation of winemakers breaking through, the style seems set to be redefined again.
Richard Burch (of Burch Family Wines AKA Howard Park) has found a biodynamically farmed vineyard at the southern end of Margaret River which produces the kind of fruit which makes his ideal style of Chardonnay.
This falls in the ‘not too big, not too lean’ Chardonnay category. It’s got some weight but it’s certainly not over done.

Citrus, apple, brioche and spices with a minor amount of struck match. Medium bodied, apple and pastry with a gentle chalky texture, some crunch of acid and a wheaty finish with some lemon in the aftertaste. Drinks pretty well. Ambles rather than races through the mouth, though it gets there in the end. A bit more zip and life needed, but good drinking nevertheless.”

2015 Mon Tout Chardonnay
The wine has settled very bright and has great clarity despite no filtration. The nose reveals citrus pith and zest, delicate peach scents and some bakery aromas, while a nervy acidity and glycerol-like texture carry flavour across the palate and prolong the cleansing, minerally finish.
