Joe Holyman has been described as “one of Tasmania’s outstanding pinot noir makers.” by Nick Stock and many others. He is the custodian of one of the best Pinot Noir vineyards in Tasmania and he knows his fruit very, very well.
This is one of the best vintages in his long history. The 2015 saw 55% whole bunches during ferment and 30% new French oak barrels for maturation.
It’s a class wine with all the Holyman hallmarks: power, poise, structure and depth. True connoisseurs of Tassie Pinot should load up, this is exceptional stuff.
What It Tastes Like
“Spice, rose petals and vanilla, plum and red fruit, some clean earthiness. Medium bodied, firm grainy tannin and fresh strawberry tang, a bit sappy, but dynamic and packed with red fruits and plum. It’s pretty coiled up and tense as a young wine. Relax, take a load off! Emery tannin and firm acid on a long finish, and again the roses and spice. Tasted a day later, and it looked better, but still pretty frisky and unevolved. It might best be described as a wine of structure and latent potential.”

This wine as with all of the Holyman wines is 100% estate grown and comes off vines which were planted in 1986. The fruit for this wine once again came from a 0.6Ha block in our vineyard called Jack. The fruit is hand picked and our well trained pickers do all our fruit sorting in the vineyard.
The 2015 Pinot Noir is 55% whole bunch and 30% new 228 litre French oak barrels. After 7 days of cold soak the wine is naturally fermented and no additions are made except for sulphur as a preservative.
