The Indomitus range at Gundog in the Hunter Valey is winemaker Matt Burton’s chance to stretch his creative muscles.

To quote Max Allen, “It’s Hunter Semillon, Jim, but not as we know it.”

This is fermented on 20% skins with 2% Gewurztraminer in the mix. Another 20% was fermented in oak as cloudy juice - Matt looking to pull out every unique character in this wine. Make his mark.

James Halliday awarded it 95 points and Max Allen described it as “a wine with classic Semillon light grassiness, but extra layers of grape-pulpy texture and richness.”

A souped-up version of Hunter Semillon which is pushing the boundaries of the variety and style. A great project for Matt and a delicious premium wine to boot.

What It Tastes Like

“Includes 2% gewurztraminer, cloudy juice wild-fermented on 25% skins, held on skins and lees for 6 months, bottled without fining, 100 dozen made. Natural wine addicts, get back in your hutch. This isn’t yellow or orange, it is pale straw-green, it has no phenolics, and is as fresh as a daisy. There’s a hint of spice on the bouquet, which may or may not be due to the gewurztraminer; other than this, it’s lemon/lemongrass/citrussy acidity all the way to the bank.” - James Halliday (Australian Wine Companion)
