- The Home of Artisan Australian Wine!
Hunter Valley Semillon is wonderful, and because of that, the winemaking behind it is usually played with a straight bat. Pick it early. Press it quick. Keep it clean. Bottle it young. This wine deviates from that ethos slightly. It's a wine that gives us a different look at this great variety. "With the Wild Semillon, we push the boundaries of conventional winemaking by fermenting a portion of the wine on skins (like a red wine) using natural or “indigenous” yeast. The aim is to create a very textural and complex style of Semillon that showcases another side of this great wine grape." - Winemaker Matt Burton We loved this take on Sem, it's textural and a little wild as the name suggests but still maintains a brilliant purity of fruit. Can't recommend it highly enough for those wanting a deeper look at Hunter Valley Semillon!
What it Tastes Like
Wild is right but the kind of wild I like! Beez wax, lemon drops. It’s almost savoury, and it's certainly striking in the palate. Gentle, clean, sparkling acidity. Some soft greenery and sherbert. Loads of charisma andbig interest factor here. Yummo!
2015 Wild Semillon With the Wild Semillon, we push the boundaries of conventional winemaking by fermenting a portion of the wine on skins (like a red wine) using natural or “indigenous” yeast. The aim is to create a very textural and complex style of Semillon that showcases another side of this great wine grape. The 2015 Wild Semillon is very aromatic, offering lemongrass, peach and some herbal tea notes. The palate is bright and fleshy with some residual sweetness there to offset phenolics (tannin) and acidity. Because the wine is so textural and carries some residual sweetness, the Wild Semillon is an interesting proposition with food matching. The wine should hold up well to spicy, Thai-style dishes where acidity, saltiness and chilli are often offset by barely noticeable sweetness. It also partners well to roast pork or lighter poultry dishes. ALCOHOL 9.5% PH 3.16 TA 6.62 g/L RESIDUAL SUGAR 10.5 g/L SOIL TYPE Clay Loam

About the Producer
GunDog Estate have a clear vision, a “determination to produce some of Australia’s finest Semillon and Shiraz”. By comparing and contrasting the styles of Semillon and Shiraz from the Hunter Valley and the Canberra District, they are endeavouring to paint a more complete picture of both varieties. Theirs is a young operation with big ambitions. Undoubtably, one of the must watch new projects from the Hunter.
The Hunter Valley is the home of Semillon in Australia. Arguably the best in the world, Hunter Semillon is one of Australia’s most truly unique wine styles. Add to that the fact that have been producing some of Australia’s best quality Shiraz for over a century and you can see why this is one of our most loved wine regions. But with a new generation of winemakers comes innovation. Now we are seeing risks being taken, new varieties being planted and some inspired winemaking which is writing a new chapter in the Hunter Valley’s rich history. We can’t wait to see what happens next.
