Winemaker Matt Burton likes to spread his wings farther afield than just his home in the Hunter Valley. Shiraz from Canberra District and Hilltops in NSW have become staples of their range and Gundog are all the better for it. This comes from the Freeman vineyard in the Hilltops. It's the second take on the same Shiraz that Matt made from this vineyard in 2015. This saw an extended time in oak, released with more muscle and sinew than the earlier released No 1 Shiraz. It received 94 points from Campbell Mattinson and is a wonderful example of Shiraz from this part of the state.

As the name implies, the 2015 Hilltops Shiraz No.2 is our second release of Shiraz from this exciting region. Like the preceding Hilltops Shiraz No.1, released earlier this year, this wine is produced from fruit grown at the Freeman Vineyard near Prunevale. Contrasting winemaking approaches have, however, delivered very distinct wines. Where the Hilltops Shiraz No.1 was about highlighting the generosity of pure fruit flavour from the region, No.2 looks at how that intensity of fruit might be tempered, and complexing layers added, through the use of oak and maturation time. As such, the Hilltops Shiraz No.2 spends an additional 3 months (12 in total) in 25% new French oak puncheons (versus 20%).

About the Producer
GunDog Estate have a clear vision, a “determination to produce some of Australia’s finest Semillon and Shiraz”. By comparing and contrasting the styles of Semillon and Shiraz from the Hunter Valley and the Canberra District, they are endeavouring to paint a more complete picture of both varieties. Theirs is a young operation with big ambitions. Undoubtably, one of the must watch new projects from the Hunter.
This is one to watch. The Hilltops in NSW has some huge potential. The high altitude vineyards in this region are producing some of the most epic cool climate Syrah/Shiraz and Cabernet on the market at the moment. With a relatively low profile (for now), the value to be had in this area is second to none. But get in quick, the word is getting out and it wont be that way for long. Love yourself the more refined side of Shiraz? The Hilltops is a place you really need to check out.
