Graillot is a collaboration between wine importer Robert Walters and iconic Northern Rhone Valley winemaker Alain Graillot. After importing Graillot’s wines for many years, Robert decided to utilise the Frenchman’s Shiraz/Syrah growing expertise to make wine from the rich soils of Heathcote.
The release of the 2015 vintage sees young Yarra champion winemaker Luke Lambert continue his run as Head Winemaker for the project wines in partnership with Maxime Graillot, Alain’s son. The 2015 ‘Syrah No.2’. is some of their finest collaborative work to date under the Graillot label.
It’s a brilliant example of modern cool climate Australian Shiraz. As Campbell Mattinson noted in his 95 point review, “It plays a Siren song for the Heathcote region as a whole… Just simply beautiful.”

2015 marks the second release for the Graillot Australia wines with Luke Lambert heading up the winemaking team. As always both this wine (Syrah No.2) and the Graillot Syrah come from the same, 3.3 hectare vineyard. The Graillot Syrah tends to come from the top of the block while the Syrah No. 2 comes from further down the slope. Ultimately however the wines are made via a barrel selection with the aim being to select the most refined, perfumed and elegant barrels for the Graillot label.
Handpicked, a combination of whole bunch and destemmed fruit was transferred to open top fermenters of various sizes (from 1 tonne ‘flower pots’ to 4 tonne fermenters). It was then pressed off to large format, older wood for ageing for 13 months. No new oak was used in the élevage. 2015’s Syrah No. 2 contains approximately 50% whole bunch component, although the aim is certainly not to have any ‘stems’ character. Instead the winemaker hopes to utilise the finesse, structure and perfume that whole bunches can bring. Another exciting development is the inclusion of some parcels of Syrah that were fermented in a pure carbonic maceration style. No sulphur was added pre-ferment, no temperature control, and the wines were bottles without fining or filtration.

Heathcote’s reputation is for big Shiraz. And they do it so well. But the times they are a changin’ with Italian varieties such as Fiano, Sangiovese, Nero d’Avola and Sagrantino all finding themselves well at home in the ancient Cambrian soils.
Long held up to the rest of the world as Australia’s flagship red variety, the mighty Australian Shiraz has undergone something of a renaissance over the past two decades. While our robust styles of Shiraz from powerhouse South Australian regions such as the Barossa Valley and McLaren Vale may have put Australian wine on the map, Shiraz from our cooler regions are giving the variety a new look. Wines from Canberra, all parts of Victoria, the Adelaide Hills, and the Great Southern, are all delivering wines of finesse and spice set to a lighter framework. The tapestry of Australian Shiraz is richly diverse, and will only continue to develop and mature into the future.
