Neil Prentice first planted Nebbiolo on his Gippsland vineyard back in 1992. It took twenty years for him to get the vintage to ripen the fruit properly. "Thanks global warming." says Neil. Now that's commitment. He makes this using traditional methods: extended skin contact, minimal oak influence - searching for the ethereal qualities that make Nebbiolo one of the most hallowed varieties in wine. What it Tastes Like
An explosion of flowery aromas. Heady scents of rose petals, lavender, cherry blossom with vibrant red fruit peeking through the floral bouquet. Intoxicating stuff. The palate is long and finely taut. Acidity threaded through the eye of a needle, fine-grained tannins linger to let you say good bye gently and in your own time. Beautiful work here from Neil.
Harvest is typically early to mid May. Guy Accad style, pre-ferment cold-maceration is a signature for all our red winemaking. Then the must is taken out of the coolroom and plunged by foot three times a day through primary fermentation. At dryness we transfer to a variable capacity tank with all the skins and lees in the hope of leaving it like this until the following vintage. This old school post-fermentation maceration softens the massive tannin of Nebbiolo by polymerisation of the short-chain molecules into longer-chain, softer tannins. I adore the plushness this brings. Old School Nebbiolo From the 2O17 vintage I intend to age the Nebbiolos in Qvevri, these seem the ideal vessel in which to make an extended skin-contact wine. After a year I drain the wine into barriques for a further few months ageing and to ensure malolactic fermentation has completed. The wine is bottled in spring without filtration.

Neil Prentice is very Pinot-centric in his approach to his vineyard in Gippsland. He is the only person to have grown a unique clone of Pinot Noir from seed in the country. The combination of this one of a kind Pinot strain and the Gippsland terroir produces a fruit like no other in the country.
Nebbiolo is one of the world’s truly great wine grapes. Most famously produced in the Italian regions of Barolo and Barbaresco, this king-pin of varieties is making a surge on Australian soil. A notoriously late ripening variety, Australian producers are constantly refining the way they grow this grape. Nebbiolo wines are light to medium bodied with incredible internal power and structure. These wines can live for decades when grown on the right sites. The classic descriptors of ‘tar & roses’ are often applied to this variety but the scope for complexity and nuance in the best versions is virtually limitless. The life of a great Nebbiolo as it matures through the years is one of the great wonders in all of wine.
