Larry Cherubino is one of the country's most prolific winemakers. Laissez Faire is his hand-crafted artisanal label. "The Laissez Faire range is made with a conscious effort to reduce additions and maximise purity and quality... made in ridiculously small batches from hand-harvested grapes." Here he hunts great sites for a unique expression of variety and place. This Great Southern Syrah is a great example of the philosophy in action. It is a beautiful take on classically styled Syrah. With a focus on elegance and finesse, this wine has recieved unanimous critical acclaim including 96 points from James Halliday, 96 points from Ray Jordan and 95 points from Tyson Stelzer.
What it Tastes Like
Dignified and exotic all at once. Dark fruit and bramble, herbs and spices. Star anise, tilled earthy and black olive under black cherry. Struts its stuff. Graceful. Pure. Stunning.

Deeply coloured, the bouquet is powerful, the full-bodied palate even more so, opening with a panoply of sombre black fruits, then picking up spicy, savoury briary nuances, all careering through to the punctuated finish. The winemaking: Grapes were hand-harvested and sorted an naturally fermented. The wine spent six months in four year old French oak prior to bottling. As the name suggests, no acid, enzymes or yeast were used in the making of this wine. The wine: A bright, purple crimson wine, with a highly fragrant bouquet of violets, rose and black cherries. A powerful wine with fruit from dry-grown, a focused palate but controlled with soft, almost absent, tannins. The palate shows concentrated fruit, length of flavour and an understated structure. Drink with: Roasted game with lentils and a red wine gravy.
