Kalgan River Shiraz was machine harvested then destemmed/crushed into fermenters where it was cold soaked to extract and retain desirable varietal flavours and aromas. When actively fermenting post inoculation they were pumped over with aeration twice a day, temperature was held around 25°C to prevent over extraction of tannins locked in the skins. Maceration was not extended due to the same reason. The wine was then transferred in barrel for malolactic fermentation allowing a soft integration of the grape and Oak tannins. The wine was fined with egg whites then bottled after 18 months barrel maturation.

About the Producer
The Willoughby Park wines have received great accolades from across the wine industry, including a five star rating from James Halliday. The winery processes around 150 tonne, with an almost even split between reds and whites. Vintage traditionally begins late February, with Reisling the first fruit making its way into the winery. The Kalgan IronRock range utilises the best of the premium fruit from the Estate-owned vineyards, around 20%, and showcases the benefits of hand-picked fruit, natural yeast, open fermenters and first class French oak.

It is the sub-regional exploration of terroir which is distinguishing this region.
