Crack some bubbles for the launch of my first sparkling wine; 2011 B Minor Blanc de Blancs “ undisgorged”. Grown in the cool climes of the Grampians region of Western Victoria, this sparkling is pure and vital. 100% chardonnay was fermented in bottle in 2011, and has been maturing on lees for 4 years. Now, in 2015, it is time to share it. This wine is in its original bottle, undisgorged. This means each bottle still contains its original yeast sediment; the broken down yeast cells forming part of the wine and bringing stunning balance to the fine acidity, and imparting layers of complexity.
