About The Wine
This wine is taking it to the ‘big guns’ of the Australian Cabernet scene.
Move over Coonawarra, look out Margie River, the Hilltops are stepping into the big leagues of the Cabernet game, and this wine is arguably its MVP.
Moppity is on a mission to redefine the way this region is seen amongst the country’s best and with the phenomenal success of this wine picking up medals and trophies left, right and centre, it seems they are well on the right track.
It is, without question, the best ever release of Cabernet from this remarkable winery, and a look into the future for this variety in Australia.
What It Tastes Like
There is a calmness and a quiet confidence to this wine. It’s finely etched, but immensely concentrated. Sheets of tannin come in waves as the luscious black currant and mint flavours wash over the mouth. The nose speaks of the Australian bush. Eycalyptus, wild flowers, bush berries, it’s all there. It’s a wine that looks you right in the eye. It says, “I’m here.”. The product of a great vintage and keen workmanship. Cracking Cabernet and great value when considered against its peers.

In beating the best from notable Cabernet regions such as Margaret River and Coonawarra, this wine has cemented the Hilltops region’s place in the top echelon of Caberent viticultural precincts in Australia. The colour is dense while the aroma is wonderfully lifted with dark berry fruits, cedar and floral notes. The tannins are polished and refined with a gravelly texture reminiscent of Bordeaux. The product of a truly outstanding vintage.

In less than 5 years Moppity have captured the wine trade’s imagination with their wonderfully balanced, concentrated and expressive cool climate wines. Take note, this winery are one of the rising stars if Australian wine.
This is one to watch. The Hilltops in NSW has some huge potential. The high altitude vineyards in this region are producing some of the most epic cool climate Syrah/Shiraz and Cabernet on the market at the moment. With a relatively low profile (for now), the value to be had in this area is second to none. But get in quick, the word is getting out and it wont be that way for long. Love yourself the more refined side of Shiraz? The Hilltops is a place you really need to check out.
Variety: Cabernet Sauvignon
Cabernet Sauvignon is one of the truly Nobel grapes. An inherently structural variety, Cabernet when handled gently can produce majestic wines of grace and beauty that mature gloriously with time in the bottle. Australian Cabernet runs the full gamut of style: from lighter, more finely boned versions from regions such as the Yarra Valley, through the exquisitely complex and firm wines of Margaret River to the intensely powerful wines from the Coonawarra, there is much to explore in the world of Australian Cabernet Sauvignon.
